Almond Poppyseed Bread


I hope you have all the ingredients for this bread so you can make it right now. Seriously, this is one of the most delicious quick breads I have ever made and eaten. And I have made a LOT of them. This will get gobbled up as soon as it is ready to eat, so it is especially good that this recipe makes TWO loaves. If you don't want to be in carb overload, you can freeze one or give it away! Let's get baking!

In a medium bowl, combine the flour, salt, and baking powder. In a large mixing bowl, combine eggs, oil,


sugar, butter flavoring,


vanilla and almond extract


and beat for 2 minutes. Add in flour mixture alternately with the milk,


mixing just until combined. Mix in poppyseeds.


Pour into two greased loaf pans and bake for about an hour.

Remove pans from oven and place on a cooling rack for 10 minutes. Remove from pans and allow to cool completely on a cooling rack.

While cooling, prepare glaze by combining orange juice, butter flavoring, almond extract, vanilla


and sugar


and whisking until smooth. Drizzle over loaves


and allow to harden. (I like to put a pan under the wire rack to catch all the glaze the falls off the bread! Makes clean up so much easier.)

Slice, and make sure you get a few pieces for yourself!

Almond Poppyseed Bread

Bread:

3 cups flour
2 1/2 cups sugar
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 cup canola oil
3 eggs
1 1/2 cups milk
2 tsp. poppy seeds
1 1/2 tsp. vanilla
1 1/2 tsp. butter flavoring (I use "butter buds")
1 1/2 tsp. almond extract

Glaze:

3/4 cup sugar
1/4 cup orange juice
1/2 tsp. vanilla
1/2 tsp. butter flavoring
1/2 tsp. almond extract

In a medium bowl, combine the flour, salt, and baking powder. In a large mixing bowl, combine eggs, oil, sugar, butter flavoring, vanilla and almond extract and beat for 2 minutes. Add in flour mixture alternately with the milk, mixing just until combined. Mix in poppyseeds. Pour into two greased loaf pans and bake at 350 for about an hour. (A toothpick entered into the middle should come out clean.)

Remove pans from oven and place on a cooling rack for 10 minutes. Remove from pans and allow to cool completely on a cooling rack.

While cooling, prepare glaze by combining all glaze ingredients and whisking until smooth. Drizzle over loaves and allow to harden.
